Explore the world of filled chocolates in this two-day hands-on chocolate bonbon workshop with Chef Mathis David. Learn how to temper, mold, decorate, and fill professional-quality bonbons using a variety of flavors and textures.

What You’ll Learn:

  • How to temper chocolate and work with molds
  • How to use colored cocoa butter to decorate your bonbons
  • Preparation and assembly of signature bonbon flavors:
    • Caramel bars (biscuit crunchy + soft caramel)
    • pistachio ganache
    • expresso Ganache

Workshop Format:

This is a fully hands-on workshop. You will complete each step, from shell casting to filling and sealing, with professional finishing techniques. Work will be done in pairs, with individual products to take home.
