Master the foundations of classic French viennoiserie in this hands-on Basic Croissant Workshop led by Chef Mathis David. Perfect for beginners and enthusiasts, this session will focus on traditional techniques and precision to help you achieve beautifully laminated croissants from scratch.

What You’ll Learn:

Essential Viennoiserie Techniques:

  • Classic Butter Croissants – shaping, proofing, and baking
  • Rich Pain au Chocolat
  • Flavored Almond Croissants

Bonus Demo (Time Permitting):

  • Chocolate Cream and Raspberry Cream fillings for croissants

Focus of the Day:

  • Hand Lamination Techniques – learn how to properly laminate dough by hand for consistent, flaky results
  • Temperature control, resting times, and tips to perfect the layers

 Workshop Format:

This is a fully hands-on workshop where each participant will prepare their dough, practice lamination, and shape multiple croissants under the direct supervision of Chef Mathis.

 Note: If the class exceeds 7 participants, attendees will work in pairs per table. 

However, each participant will complete their products individually.

Whether you want to bake professionally or simply make croissants at home, this class is a perfect introduction to pastry artistry.
